From Nigeria to Boston
http://www.youtube.com/watch?v=9VNkCazT_T4&feature=youtu.be
When you first meet Oluwagbeminiyi Osidipe, you encounter a very vibrant, friendly, and unique personality. Oluwagbeminiyi or Niyi – as she shortened her name for simplicity – was named by her mother, who had a “very personal experience” when she had her, Niyi explained. Niyi is a Yoruba Nigerian transplant who arrived in the U.S. in 2006. As one of the most densely populated (West) African countries, Nigeria derives its name from the river that spans its land. To the South, it borders the Gulf of Guinea to the Atlantic Ocean. Originally colonized by the British, Nigeria gained independence in 1960. Its main ethnic groups are the Hausa, Igbo and Yoruba, who speak English and their own respective languages, while major religions include Islam, Christianity and indigenous beliefs. Niyi shares her story, her views on politics, cultural differences she’s embraced with humor, and what we can learn from each other by expressing curiosity. Her message is simple: travel enriches us through its exposure to new cultures, and enables us to grow.

Mark Twain on Travel
“Travel is fatal to prejudice, bigotry, and narrow-mindedness, and many of our people need it sorely on these accounts. Broad, wholesome, charitable views of men and things cannot be acquired by vegetating in one little corner of the earth all one’s lifetime.” (American author Mark Twain, Innocents Abroad).
Have you had the opportunity to travel (extensively, within your country, or even once abroad)? Can you relate to Twain’s sentiments? How does travel enrich us?

Pleasing The Taste Palate
Food has the wonderful quality of uniting us no matter where we are. There is nothing partisan or narrow-minded about food. It simply invites us to indulge, create recipes, and share with others. Two of my favorite Polish dishes (included in collage) are pierogies and barszcz czerwony – a beetroot soup – served on Christmas Eve in Poland. How does food bring us together? What are some of your favorite dishes and why? Can food trigger memories?

If you’re a passionate globetrotter who wants to peek into every corner of the world, we can say that we definitely understand your aspirations! The truth is that a large number of people are attracted to Asian culture and cuisine, and if you’re one of them, you’re at the right place! Here are five fantastic reasons for you to visit Hong Kong (aka the food capital), so check them out and embark on your new adventure as soon as possible!
Visit Hong Kong for the duck
Even though Peking duck is probably the first dish that comes to your mind when someone mentions Chinese cuisine, the truth is that it’s actually a dish typical of the north of China. On the other hand, there is an authentic Cantonese roasted duck which is more characteristic of the south of China, which is exactly what you should look for when in Hong Kong. Prior to roasting the duck, it needs to be properly air dried first – which is a process that takes at least four hours. It will contribute to a tasty, crackling-crisp skin, whereas the marinade poured into the cavity and sewn in will result in the juiciest meat you’ve ever tried. That’s exactly why you mustn’t skip roasted duck while visiting HK!
Visit it for dim sum
If Chinese cuisine is known for anything, it’s definitely dim sum. In case you aren’t familiar with the term, dim sum dishes are prepared as small, bite-size portions of steamed buns served in a small steamer basket. A lot of traditional Chinese restaurants serve dim sum together with tea, and these actually form a full tea brunch adored by both the locals and the tourists. From Michelin restaurants to affordable ones that serve the most delicious street food – everyone offers dim sum! You should also know that the most popular methods of preparing this dish include steaming and frying, and that there are usually three to four pieces in one serving.
Visit it for chicken noodle soup
Another fantastic dish you mustn’t skip when in Hong Kong is chicken noodle soup, as a lot of people would agree that nothing says comfort better than a bowl of enticing chicken soup. A combination of rich chicken broth, rye and egg noodles, grilled leg meat, mixed vegetables, and garlic ancho paste is exactly what you need after a long and busy day. It will awaken all your senses and make you feel at home, which is exactly what matters most, right?
Visit it for burgers and beer
On the other hand, if you don’t like stepping outside your comfort zone and trying new things, you should know that you surely won’t get disappointed in Hong Kong! Apart from the traditional Chinese cuisine that offers tempting roasted duck, exquisite dim sum, and yummy chicken noodle soup, there are also outstanding burgers and craft beer you simply have to try. A rich combo of avocado, lettuce, tomato, and onion, matched with heavenly cheddar and luscious beef patty is everything you should ask for, as this burger is probably the best possible pick that will remind you of your favorite one back at home. You won’t go wrong with this Californian restaurant in Hong Kong. They have an amazing choice of American-style food. Don’t forget to ask for amazing craft beer, and you’ll get a chance to see what heaven tastes like!
Visit it for shrimp dumplings
If you’ve ever googled Chinese cuisine, you’ve probably noticed that dumplings are an extremely important part of any traditional Chinese meal. These can be found across all regional styles of Chinese cuisine, which is the case with Hong Kong, too. Basically, these are made by spreading a square dough wrapper (which is made from egg, flour, water, and salt) on the palm of your hand, and placing a small amount of filling in the center. The dumpling is then sealed into a desired shape by compressing the wrapper’s edges together with the fingers. Of course, shrimp filling is the most common one, together with ground pork one, so don’t skip shrimp dumplings if you ever find yourself in Hong Kong!
As you can see, Hong Kong is perceived as the food capital for a good reason – the outstanding variety of tasty meals is here to prove that claim! You certainly won’t regret if you decide to visit HK in the near future, and all you have to do is to bear our tips in mind if you want to experience Chinese cuisine at its best!
